Cheesy Stuffed Shrimp YUM!!

Cheesy Stuffed Shrimp Great Appetizer!! or just a little snacky!

4 oz. of cream cheese, softened(you can zap it for about 10 sec, stir and then zap another 10 sec and stir, you want it soft, not runny)

4 tsp horseradish

1 tbsp Parmesan cheese, grated~please use fresh Parmesan Cheese, it’s so much better!

I use a microplane grater to grate the hard cheese. It’s real easy! You can get one here!

1 lb. large shrimp, peeled, deveined and cooked. You can buy shrimp already cooked, it’s pink, or cook it yourself; the uncooked are gray. If it says 40-60 or 90-100 on the bag, that means there are that many pieces per pound. The lower the number, the bigger the shrimp. You want to get the bigger ones so you can put filling in them. And if you are going to cook them, please don’t overcook!! They will get rubbery!! Shrimp cooks in about 4 minutes! Real FAST!! (add a little salt and pepper in a little bit of olive oil to saute)

Put the cream cheese into a small mixing bowl.

Then add the horseradish and Parmesan cheese and mix it up until it’s blended and smooth.

Put the mixture into a little sandwich sized baggie and cut one corner out of the bag. (Just a little snip at the corner.)

Cut the shrimp along the outside curve about 2/3 through the shrimp. Don’t cut all the way through, you are going to fill these.

Squeeze the cream cheese mixture into each of the shrimp being careful not to overfill.

Put the little stuffed shrimps on a plate and put them in the fridge for a bit. (At least 30 minutes)

Add cocktail sauce on the side for dipping.

Bubba’s(don’t tell him I said that)Birthday

bubsbrowniecakeYesterday was my little one’s 11th birthday! He’s so cool. He doesn’t like cake so we opted for a brownie! (my other son always wants CHEESECAKE!!) I just bought some Ghiradelli chocolate brownie mix and we dolled it up with frosting and sprinkles. Not your ordinary sprinkles, but some fancy-schmancy sprinkles like coconut-chocolate, peanutty-chocolate and minty-chocolate! It was awesome!
I have never seen a birthday cake/brownie go so fast!! The kids loved it!! we also had some sparkler candles and the b-day party was totally cool!

He and his friends really enjoyed the day!  HAPPY BIRTHDAY ADAM(BUBBA)!!!

Now For Those Onion Rings!!

onion-rings22-3 sweet onions (Vidalia anyone??)

flour

salt

pepper

buttermilk

oil for frying

slice the onions about 3/8″ and separate the rings

dredge(cool word) the onion rings into flour that has been seasoned with salt and pepper.

Dip the floury onion rings into buttermilk to completely coat them and then dip them into flour again that has been seasoned with salt and pepper.

Fry them in oil for about 1-2 minutes then flip them over to the other side. They cook really fast (but not as fast as fried pickles!!!)

How about some dippin sauce????

A tsp of Dijon mustard and 2 tbsp of honey added to a cup of sour cream makes an awesome honey-mustard dippin sauce!!

Add some of that honey to BBQ sauce for a great tasting Honey Barbecue Sauce.

Jalapeno Dogs

 So I can’t cook country gourmet every night ? some days we eat some already prepared food like Hot Dogs! Tonight is a hot dog night. Not just any hot dog……a totally dolled up, dressed up, yummy-for-my-tummy hot dog!!

Y’all ever heard of pickled jalapenos and carrots? Saw a recipe for it on a foodie blog, but I just buy it in a can. Will have to try the recipe some day. It’s called escabeche. I love to chop them up together like a relish and put it all over grilled hot dogs. I also add a little onion. Talk about some ZING!!

Just grill the dogs until they are done, with a little bit of burn on them (not too much!) Mayo up the bread, yes mayo!! Mayo rocks on grilled hotdogs. Other dogs might need relish, ketchup and/or mustard but grilled….definitely mayo. Something about the grill taste makes these dogs ROCK!! I always use real mayo, too. None of that funny stuff!!

What I Call My Bobby Flay Burger!!

I subscribe to a foodie magazine from Food Network and the latest one I have has some Bobby Flay burgers in it. Now, I love me a good burger!! (I also love me a Bobby Flay!!) So the kids and took a vote and the Cheyenne burger won!! Kinda like a Western Bacon Cheeseburger from that star place…and Oh my goodness!! We made these burgers and they we fabulous!!!! Homemade onion rings AND bacon!!! Hello??? Talk about some YUM!

Had I known onion rings are so easy to make, we would have been chasionion-rings1ng folks away with onion breath years ago! Imagine a houseful of kids all with onion breath…..Oh my!! (Let’s not go there!) This is my first attempt at onion rings. They ROCK!!

Anyway here are some pics of the now famous (at my house anyway, thank you Bobby Flay) Cheyenne burgers we created and the wonderfully mouth watering onion rings that went along with them. ?
